Recipe Monday- Toddler Pasta

I'm always looking for, new healthy things for my almost 9 month old to eat with her fingers.  She is starting to refuse purees, but is still a little to young for some of the cut up table foods.  I make this for our family in a more adult fashion, and just tweeked it a little for my littlest and froze it in ice cube trays to easily use later.

Toddler Pasta 

Ingredients: 
2 cloves of garlic, minced
1 package of cherub tomatoes
1/2 zucchini cut up in small squares
2 carrots diced & boiled down soft
(any other veggies that you want to add, just make sure they are soft when they are added together at the end before pureeing)
2 T. olive oil

Whole wheat pasta, cooked (make as much as you want for the next few days, keep stored in fridge)


Directions
Clean all of your veggies well, even if they're organic.  Preheat oven to 400 degrees.  In an oven safe dish, place your tomatoes, garlic, and zucchini (and select other veggies such as summer squash, bell peppers, etc... any other harder veggies should be boiled or steamed to a soft texture) in the dish.  Pour olive oil over over the veggies and stir.  Cook for 25-35 minutes, until tomatoes are completely soft (and squished) and the veggies are in their liquids.  Remove from the oven, and let cool.  Place other veggies (carrots, etc) in with the tomato mixture.  Puree in blender, bullet, or other device until smooth like pasta sauce.  Freeze in ice cube trays and store in air tight container for up to a month.  When you have cooked pasta, heat sauce in microwave until warm, stir in some bite sized pasta (make sure it's not too big!!) and microwave for a bit longer and enjoy!

Evie- Toddler Pasta, sweet potato chips, grilled chicken, cheese sticks, green beans, peaches & purees

Baking- Banana Muffins
