Recipe Monday- Chipotle Mayo & BLTA

Oh. My. Word. 
This meal was delicious.  We made it all over again the night after we had it.  I am still enjoying my chipotle mayo.  It's a perfect summer meal!  Enjoy! 



 
B.L.T.A 
Bacon Lettuce Tomato w/ Avocado
 

&
Sweet Potato Fries w/ Chipotle Mayo

BLTA: 
Sour dough bread, thick cut hickory bacon, tomato, lettuce, and mayo.  Spread sour dough with butter and lightly fry it, add ingredients and enjoy!

Chipotle Mayo:
Ingredients: 
1/4 cup sour cream
1/2 cup mayonnaise 
1/4 t. fresh lime juice
2 chipotle chilies in adobo sauce (found at any normal grocery store) 

Directions:
Add all ingredients together and blend in a food processor, blender or bullet. Goes great with sweet potato fries or onion rings. Store extra in an air tight container for up to a week.  Enjoy!

Wednesday: Beef & Rice, broccoli, crescents
Thursday: Tacos & rice 
Friday: Cabin- stop along the way
Saturday: Cabin Hamburgers & Hot dogs
Sunday:  Cabin (?)


lunches: chicken salad w/ wheat crackers, mac & cheese, chicken nuggets
Snacks:
Baked item: Pumpkin Cookies

For Evie:  Steel cut oats & Apples in the slow cooker
Chicken Noodle Soup puree 
Boiled diced pears & cinnamon
