Recipe Monday: Balsamic Grilled Chicken & Peppers and Cheesy Potatoes

{Happy Memorial Day}

Here are a few great recipes for the holiday!  

I saw both of these things on pinterest, but was too lazy to look up the recipes, so I basically winged it and this was the outcome. 
I made these last week and can't wait to make it again! 


Balsamic Grilled Chicken and Peppers
&
Grilled Cheesy Potatoes



Balsamic Grilled Chicken & Peppers
Ingredients: 
2 chicken breasts thawed and tenderized (stick between clear wrap & pound with a mallet)
2 T balsamic vinegar
1 pinch of salt & pepper
1/2 cup of bell peppers sliced in thin pieces (I use the mini bell peppers that come in a big bag.  It's nice to have multicolored peppers and they're small and easy to cut up.)
1/4 white onion, cut into thin pieces
Another 2 t. of balsamic vinegar
1 T olive oil 

directions: 
In a plastic bag, marinate in balsamic vinegar, salt and pepper.  When ready to grill, begin sauteing the peppers and onions in the olive oil and balsamic vinegar.  When chicken is fully cooked on the grill, finish plate by spooning peppers over chicken.  Enjoy!


Individual Grilled Cheesy Potatoes
 {This isn't a very healthy one, but hey, it's a holiday, enjoy!}
Ingredients:
2 medium sized potatoes
1 t. ranch dressing
1/4 diced onion
1/2 c. shredded cheddar cheese
1/4 c. butter, diced into small squares. 

Directions:
Mix all of the ingredients together in a large bowl.  Break 2-3 pieces of aluminum foil into 1 serving pieces (like the size of a plate) and spray with non-stick cooking spray, unless you already have non-stick aluminum foil.  Scoop potato mixture onto foil, about a cup of the mixture should be 1 serving.  Take one side of the foil and fold it over to the other side, then roll it tightly over the potatoes.  Now roll the sides up as well, tightly so that no air can get out.  These potatoes will steam as they are grilled.  Plus, you don't want cheesy butter goop all over your grill.  Grill these potatoes for about a 25-30 minutes or so.  Open them to check them and poke them with a fork, if they aren't cooked yet, roll the foil up and grill a few minutes longer.  When finished, pour onto plate and enjoy!
