Recipe Monday- 3 Frugal Meal Ideas

Happy Monday!

We're going to do something a little different on this Recipe Monday.  I've done this a few times before, and just wanted to add to the ideas.  We've been working hard to stay on, or below our budget for every category in our budget.  Being that I'm basically in charge of buying groceries and cooking meals, I have been trying very hard at making sure I don't exceed my budgeted amount for food.  I also try very hard to make our budgeted meals healthy and delicious as well.  As most of you know, that can be hard... So, here are a few of my favorite extremely frugal meal ideas! 



{Beef & Rice}
Meal cost: approx. $7, feeds 4 adults

Ingredients: 
1 lb. ground beef
1 box of beef flavored rice
1 c. shredded cheddar cheese

Directions: 
Brown beef, add rice and cook per rice directions.  5 min. before rice timer goes off, place cheddar cheese on top of the mixture so it melts. 

served with: crescent rolls (generic brand) and frozen broccoli


{Cheesy Chicken Enchillada Rice}
 Meal cost: approx. $4.5, feeds 4 adults 

Ingredients:
2 chicken breasts or 6 chicken tenders, cut into 1/2" pieces 
1 box of spanish rice
1 cup of shredded cheddar cheese

Directions: Cook chicken pieces until white on outside, add rice and cook per rice directions.  5 minutes before rice timer has gone off, add cheese to melt.  Serve on warmed tortilla shells 

served with: guacamole, chips and rice mixture served on warmed  tortilla shells.



{Breakfast for Dinner}
Meal cost: approx. $4.75, feeds 4+ adults

ingredients:
pancake mix
bacon
eggs
Bread 
(any other breakfast items you want, these are just the ones I included in the meal budget) 

directions:
Make your breakfast! :)  To spruce up your eggs, try sauteing some green onions first, adding them to the eggs, scrambling the eggs, then when eggs are cooked add small pinches of cream cheese.  Deeeelicious!
