Recipe Monday- Lemon Garlic Grilled Chicken

Lemon Garlic Grilled Chicken


2 boneless chicken breasts, thawed
1/3 cup lemon juice
2 T olive oil
1 T minced garlic
1 t. of each salt and pepper 

Pound chicken breasts down to 1/2" thickness between 2 pieces of clear wrap.  Mix all ingredients together in a gallon sized bag, place chicken and seal.  Swish mixture around chicken and let marinate for 2-4 hours before grilling.  Grill until chicken is completely cooked.  

Sooo good, and pretty healthy!  

We serve this with steamed broccoli, cous-cous or quinoa or over fettuccine pasta with a salad.  Enjoy!
