Recipe Monday- Garlic Chicken in a Lemon Butter Sauce

Ok, can I just talk about how absolutely delicious this one was?  I am pretty impressed with myself.  I did a mixture of 3 recipes, and added a few little things here and there on my own.  My husband, the garlic lover, loved it.  My daughter even thought it looked tasty enough to sample.

Garlic Chicken in a Lemon Butter Sauce
Recipe is for 2 servings.

1/2 lb.  chicken (we used tenders, you can use breasts if you prefer)

Plate 1:
Seasoned flour (1 c. flour, a pinch of salt, pinch of pepper)
1 T butter
1 t. 

Plate 2:
1 egg, beaten
1/4 cup of grated parmesan

Plate 3:
(place all ingredients in a bag, and crunch until it is bread crumb consistency)
6 saltine crackers
1/2 t. dried basil
1 t. minced garlic
pinch of salt
punch of pepper

For sauce:
5 T. butter
2 T lemon juice
1 t. minced garlic

Pre-heat oven to 350 degrees.  Roll out a sheet of plastic rap and place chicken on it, cover again with plastic wrap.  Use a flat surface to flatten the pieces of chicken down to 1/4" thickness.  Dip chicken in the 3 plates in order, making sure that it has been coated well with each, especially the cracker crumbs.  Heat a pan with olive oil and butter, place chicken in and cook each side until it is golden brown.  It will cook fast, and will have more time to cook later.  When both sides have been browned, place the chicken in a baking dish.  In the same pan, melt the remaining butter, lemon juice and garlic.  Let simmer for 1-2 minutes, then pour over chicken in baking dish.  Place in the pre-heated oven for 8-10 minutes.  Let sit for a minute or two before serving.  Enjoy!

I served this chicken with asparagus risotto, rolls, and a spinach salad.  It was delicious!!
