Recipe Monday-

Going along with the theme of tasty, yet affordable meals, I made this one last Thursday.  It was nice and quick so we could eat before Matt headed off to class.  It's not super fancy, but we will definitely be making it again in the future when we're in a hurry! 
I'm going to name it after our current situation in life...

The Masters Chicken & Rice
For the family in a busy transition! 

1 box of chicken flavored rice (we do chicken brown rice or cous cous)
1 bag of frozen broccoli
1/2 lb. of chicken chopped into small pieces
1/4 c. chopped onions
1 t. minced garlic
salt and pepper to taste

Directions: Prepare your rice or cous cous according to the directions on the box.  Place garlic, onions and chicken in a large pan and cook until chicken is cooked through.  Add frozen broccoli and cook until tender.  Add rice to the mixture and serve hot.  Super easy, but really yummy!  This made about 4 servings, which was great to freeze for Matt's work lunches.
