Chicken Curry Cous-Cous
with Mango Chutney
Cooked chicken, diced. (I used 2 breasts)
1 T. olive oil
1 1/2 t. curry powder
1-1.5 cup of plain cooked cous-cous.
1/3 c. onion diced
1/4 c. frozen peas
1 c. red bell pepper diced
1/4 c. mayo
2 T. mango chutney (can be found in the Indian section at the market)
Cook your chicken and dice it, set aside. Cook your cous-cous according to directions and set aside. Cook onions in oil in a large frying pan until slightly soft, about 5 minutes. Sprinkle curry powder on onions and stir. Put meat, cous-cous, peas, peppers in and stir. Put mango chutney and mayo in and stir. You might have to move it to a larger bowl before you put the chutney and mayo in so that it gets evenly mixed without going everywhere. (I will learn from my mistake, you should too.)
I served this with homemade won-tons. For won-tons, buy wrappers and place 1 t. of cream cheese in each wrapper, fold over corner to corner (triangle, fold one corner up, then the other. Use water to seal when you fold. Place in hot olive oil and cook for about 1 minute on each side. Watch closely!
