Recipe Monday

Easy Chicken & Rice

1 tbsp. olive oil
1 lb. boneless chicken tenders
1 t. flour (optional) 
1/2 cup of stir fry sauce
1 cup of brown rice (cooked as directed)
1 cup of frozen peas
1/4 cup of sliced almonds

Cook rice as directed.  2-3 minutes before it is done cooking, add frozen peas to the pot.  Meanwhile, sprinkle chicken with flour, heat oil in a large pan and brown chicken for 2 minutes on each side, then cook through.  Once cooked all the way through, pour stir fry sauce over chicken and allow to heat.  After everything is cooked, add sliced almonds to rice, stir and serve chicken over rice mixture.
