Recipe Monday

I have made this a few times and will be making it again for a few of our old friends who are visiting for dinner on Wednesday.  I started making this when I was a vegetarian and have modified it since.

Rustic Asparagus Pasta

1 box of pasta of your choice
1 bushel of asparagus, trimmed and cut into 1 inch pieces
1 c. of baby bella mushrooms
2 T of olive oil
1/2 C. fresh grated parmesan cheese (no canned stuff...yuck.)
2 T. + butter
1 t. salt
1 t. fresh pepper
1 1/2 t. minced garlic
1/2 cup of chopped scallions

Boil pasta in water, put asparagus in boiling water 3 minutes after pasta, drain with pasta.  Place scallions, mushrooms and garlic in large sauce pan on medium-low heat and slowly brown.  Add 1/2 butter and turn heat off, add salt and pepper.  When pasta and asparagus is finished, pour butter sauce over pasta and add more butter and parmesan cheese.  Plate with extra parmesan cheese on top and serve with toasted rustic bread. 

You can add grilled chicken to this recipe to add protein.
